mail-muncher is a read-only email ingestion server that filters IMAP or Gmail archives, stores messages as .eml and markdown, and serves that archive over MCP. It is best suited to personal knowledge management, compliance-friendly research, or offline analysis pipelines where write access to mail is not wanted. The read-only design is a good safety signal, but with very low stars it still looks niche and likely best for users comfortable managing mail export and local storage themselves.
